LEFTOVER MASHED POTATO SOUP Recipe

Ingredients
  • 1 tablespoon butter
  • 1 stalk celery, chopped fine
  • 1 clove garlic, minced
  • 1 cup Ham, Chopped
  • 3 cups leftover mashed potatoes
  • 2 cups water
  • 2 chicken bouillon cubes, mashed to powder
Directions
Melt butter in large sauce pan. Sauté celery and garlic until the celery softens. Add ham and heat thoroughly. Add mashed potatoes, water and chicken bouillon. Allow to come to a boil and reduce heat, stirring occasionally until thickened slightly. Serve with shredded cheese and/or crumbled bacon if desired.

NOTE: Easy and delicious! If you have leftovers of the Leftover Mashed Potato Soup, you may need to add some more chicken broth to it the next day, as it thickens considerably over time.
