VEGETABLE BEEF SOUP 27 Recipe

Ingredients
  • 1 pound Ground Beef
  • 1 cup onion, chopped
  • 1 cup potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup cabbage, shredded
  • 1 cup celery, diced
  • 4 cups canned tomatoes
  • 1/4 cup barley
  • 3 cups water
  • 2 teaspoons salt
  • 1/4 teaspoon basil
  • 3/4 teaspoon thyme
  • 1 bay leaf
Directions
Cook the ground beef and onion together until all the pink has disappeared and the meat is lightly browned. Drain off excess fat; add all the remaining ingredients and bring the mixture to a boil. Cover and simmer for 1 hour. Makes 9 cups.
