Wheat Berry Salad Recipe

  • 1 1/2 cups wheat berries
  • 8 ounces cream cheese
  • 3 tablespoons lemon juice
  • 15 ounces un-drained crushed pineapple
  • 1 package Vanilla instant Pudding (lg pkg)
  • 1 package Cool Whip (16 ounce pkg)
  • 1 cup nuts (optional)
Wash wheat berries and soak over night. Simmer 1-1/2 hours or until chewy. Drain and cool. In separate bowl combine cream cheese, lemon juice and pineapple. Add instant pudding mix. Fold in cool whip, wheat berries and nuts (if desired). Refrigerate.

*This recipe serves a lot. I usually make only 1/2 of the batch.
