CATFISH STEW FOR A CROWD Recipe

Ingredients
  • 25 pounds catfish
  • 1 pound fatback
  • 5 pounds onions, diced
  • 5 pounds Irish potatoes, cut into chunks
  • Salt and pepper to taste
Directions
In a large cooking pot, fry fat back until brown. Cut fish into small portions. Add one layer of fish to fatback, then onions, then potatoes. Repeat process until all ingredients are in the pot. Fill pot with water, leaving 2" from the top. Cook until potatoes are done. Do not stir or mix while cooking. When ready to serve, gradually turn whole stew in pot. Serves 25 people.
