1.) Dice onion and celery.
2.) In a lg stock pot, place turkey carcass and cover w/ water, add diced onions & celery, boil til the remaining meat can easily be removed from bones, salt & pepper to taste.
3.) Remove meat from bones, discard bones, set meat aside.
4.) Add tomato sauce to pot til color of the stock becomes red (much like spaghetti sauce), add meat back into pot, add spaghetti, cook til done (soup thickens much like a stew).
