Vegetable Lover's Chili Recipe

Ingredients
  • 2 cups chopped celery
  • 2 cups chopped carrots
  • 1 1/2 cups chopped green pepper
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 2 - 28 ounce cans tomatoes
  • 2 - 16 ounce cans kidney beans
  • 1/4 cup white wine vinegar
  • 1/4 teaspoon hot pepper sauce or to taste
  • 1 cup light beer
  • 1 tablespoon Chili Powder
  • 1 tablespoon chopped parsley
  • 2 teaspoons salt
  • 1 1/2 teaspoons basil
  • 1 1/2 teaspoons oregano
  • 1 1/2 teaspoons cumin
  • 1 teaspoon all spice
  • 1/4 teaspoon pepper
  • 1 bay leaf
Directions
Combine all ingredients and cook until heated through. Remove bay leaf before serving.
