MACARONI SALAD WITH VEGETABLES Recipe

Ingredients
  • 2 1/2 elbow macaroni, raw
  • 1 gallon water
  • 1 tablespoon salt
  • 1 pound broccoli, buds
  • 1 pound cauliflower, buds
  • 1 pound cherry tomatoes
  • 1 cup celery, diced
  • 1/4 cup onions, diced
  • 3 pounds salad dressing (Miracle Whip)
  • 2 tablespoons mustard
  • 2/3 cup sweetened condensed milk
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar
Directions
All vegetables should be fresh. Boil pasta in water with 1T. salt for 20 minutes, or until tender. Drain and rinse well in cold water and drain well again. Mix the salad dressing, mustard, milk and spices together until well blended. Fold together the fresh vegetables and pasta. Toss well with the dressing mixture. Serve well-chilled, about 40°. Yields 50 to 55 servings of 4 ounces each. NOTE: In place of sweetened condensed milk, you may substitute half & half cream and use double the sugar.
