Nacho Potato Soup 7 Recipe

Ingredients
  • 1 package auGratin potatoes
  • 1 can corn; drained
  • 1 can Rotel, undrained
  • 2 cups water
  • 2 cups Velveeta Cheese, Cubed
  • 1/2 package taco Seasoning
  • 1 pound hamburger, browned and drained
Directions
Crush potatoes into bite sized pieces. Add potatoes and contents of sauce packet into a 3 qt. pan. Add corn, Rotel, and water. Bring to a boil, reduce heat, cover and simmer for 15-18 minutes. Add cheese, hamburger and seasonings. Cook until cheese melts.

*Best made the day before.

*Freezes well.

Serve over tortilla chips if you want.
