Cheesy Vegetable Soup 9 Recipe

Ingredients
  • 6 cups hot water
  • 2 1/2 cups diced potatoes
  • 1 cup diced Celery
  • 1 cup diced onion
  • salt/pepper
  • 1 package up to 4 cups) frozen California blend veggies
  • 2 cans cream of chicken soup
  • 1 pound cubed Velveeta cheese
Directions
Combine water, potatoes, celery, onion and salt and pepper. Boil 15-20 minutes. Add frozen vegetables; boil 10 minutes. Add cream of chicken soup, stir to blend/heat through, do NOT boil. Add cubed cheese, stir until melted. Total time is approx. 1.5 hours. Do NOT freeze leftovers.
