Pumpkin Soup 14 Recipe

This is a great way to use left over pumpkins. Served it in little hollowed out pumpkins of various sizes. Or put it in the hollowed out pumpkins hot and then put the whole thing in the oven at 350 degrees until ready to serve.

Ingredients
  • 1 pumpkin, peeled, seeded, cubed
  • 2 cups apple cider
  • 2 squares chicken bouillon
  • 1 onion. sliced
  • 1 apple, peeled, sliced
  • 1/4 cup butter
  • 1 cup half-n-half
  • 1 teaspoon cinnamon
Directions
Simmer cubed pumpkin in apple cider and chicken boullion until soft.

Sauté sliced onion and apple in butter until soft.

Combine pumpkin and onion-apple-mixture in blender; blend until smooth.

Simmer on medium and add half & half and cinnamon.
