Strawberry Spinach Salad w/Lemon Dressing Recipe

Ingredients
  • 2 bags fresh baby spinach (2 to 3 10 ounce bags)
  • 1 basket fresh strawberries (3-4 per person) sliced
  • 3/4 cup toasted slivered almonds or pine nuts
  • 1 cup fine white sugar
  • juice of 2 lemons
  • 2 egg yokes
  • 3/4 cup light salad oil
Directions
Day ahead make lemon dressing: combine sugar & lemon juice, stir till dissolved, add egg yolks, beat until creamy, blend in oil, refrigerate until serving, whisk before serving. Wash spinach, take off stems, toss in large bowl with strawberries, almonds, add dressing, toss (may add more strawberries if you like), serve.
