Creamy Ginger Pumpkin Soup Recipe

  • 1 onion (small)
  • 1 tablespoon butter
  • 1 pound fresh pumpkin, cubed
  • 2 cups Chicken Broth
  • 2 teaspoons curry
  • 2 tablespoons fresh ginger, chopped
  • 2 teaspoons turmeric
  • 1 cup half-and-half cream
  • salt/pepper to taste
melt butter in a large pot and add onions, cook until tender. Add pumpkin, broth and ginger and cook over medium heat fr 15 minutes until pumpkin is very tender. Puree with hand blender until texture is smooth. Add curry, turmeric and cream and heat through without boiling. Add salt/pepper. Serve with bread.
