Finnish Beer Cheese Soup Kaljakeitto Recipe

Ingredients
  • 2 cups milk
  • 2 tablespoons flour
  • 1 tablespoon sugar
  • salt to taste
  • 1/2 cup dark Finnish style beer
  • 1 tablespoon dark corn syrup
  • 1/4 teaspoon ground ginger
  • 2 cups diced Emmenthaler Finnish style Swiss Cheese
  • 1/2 cup beef broth
Directions
In a saucepan, combine milk, flour and sugar; heat to a boil, stirring until thickened. Remove from heat. In another pan combine beer, broth, corn syrup and ginger; heat to boiling, stirring constantly. Stir beer mixture into thickened milk and flour. Return to heat; heat to boiling. Place cheese in bottom of soup bowls; ladle soup over cheese and serve immediately.
