Greek Vegetable Salad (Jenny Craig) Recipe

Ingredients
  • 1 head romaine lettuce, torn into bite sized pieces
  • 2 cups tomatoes, chopped
  • 1 cucumber, thinly sliced
  • 1 onion, thinly sliced
  • 1/2 green bell pepper, seeded, cut into strips
  • 4 ounces reduced fat feta cheese, crumbled
  • 2 teaspoons extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon water
  • 1 garlic clove, minced
  • 1/4 teaspoon dried oregano, crushed
  • 1/8 teaspoon freshly ground black pepper

In a large bowl, toss together lettuce, tomatoes, cucumber, onion and green pepper. Top with cheese.

In a small bowl, whisk together oil, vinegar, water, garlic, oregano, and black pepper. Pour over salad and gently toss.

This tasty salad has the perfect vegetable combination. The red wine vinegar and oregano give this dressing a little zing. Serve this beside any pasta dish or add chicken or shrimp to make this a meal.
