Macaroni Salad 61 Recipe

  • 1 small elbow macaroni, cooked (16 ounce box)
  • 4 pickling cucumbers
  • 3 tomatoes (large)
  • 1 mayonnaise
  • garlic salt, to taste
  • 2 sharp cheddar cheese, finely shredded
Peel and dice cucumbers. (if fresh in summer may leave peel on). Dice tomatoes and add to cucumbers. Add garlic salt, start with about 1 T. and mix together. Add 1 C. mayonnaise and stir. Add macaroni and mix. (you may want to add extra garlic salt and mayonnaise, depending on your taste.) Pour into large bowl, add cheese, stir into macaroni salad. cover and place in refrigerator until ready to eat. This is best with fresh tomatoes and cucumbers.
