Summer Vegetable Salad with Goat Cheese Recipe

  • 1 box mini Bow Tie Pasta
  • 1 cup cherry tomatoes
  • 2 cups diced summer squash/zucchini
  • 1/4 cup basil
  • 2 cups diced butternut squash
  • 1/2 cup olive oil
  • 2 cups diced eggplant
  • salt and pepper to taste
  • Dijon Mustard Dressing
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon red wine vinegar
  • 1 tablespoon mayo
  • 1 teaspoon sugar
  • 1 teaspoon sour cream
  • salt and pepper to taste
  • 1 cup crumbled goat cheese
Prepare pasta as usual, grill vegetables in oil and toss everything together. Add tomatoes, cheese and basil. Serve room temp, or cold with Dijon mustard dressing.
