Greek White Beans and Roasted Red Pepper Salad with Tahini Sauce Recipe

Ingredients
  • 2 cans white beans
  • 1 can chicken stock
  • 1 red onion
  • 2 roasted red peppers (40 minutes at 375°)
  • 1/2 cup Tahini sauce
  • 1/4 cup Italian parsley
  • juice of 1 lemon
  • 1/2 cup diced tomato
  • salt
  • pepper
  • red pepper flakes
Directions
Boil beans with the stock for 10 minutes. Broil onion halves for 3 minutes. Dice all ingredients. Make a dressing to serve this with by combining the Tahini sauce and lemon juice. Decorate with parsley and red pepper flakes. Kale Orexe!
