HEAVENLY PINEAPPLE MOLD Recipe

Ingredients
  • 1 package lemon gelatin (3 ounce pkg)
  • 1 cup boiling water
  • 3/4 cup pineapple juice
  • 1 tablespoon lemon juice
  • 1 1/4 cups crushed pineapple, drained
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup heavy cream, whipped
Directions
Dissolve gelatin in boiling water; add pineapple juice and lemon juice.

Chill until slightly thick.

Fold in pineapple, cheese, and whipped cream.

Pour into 1-1/2 quart mold; chill until firm.
