Marinated Vegetable Salad 8 Recipe

Ingredients
  • 2 cups fresh broccoli florets
  • 2 cups fresh cauliflower
  • 1 cucumber-halved and thinly sliced (medium)
  • 1 cup sliced fresh mushrooms
  • 1 cup cherry tomatoes-halved
  • 1/3 cup finely chopped red onion
  • 1/2 cup fat-free italian salad dressing
Directions
In a large bowl, combine broccoli, cauliflower, cucumber, mushrooms, tomatoes and onion. Add dressing; toss to coat. Cover; refrigerate for 8 hours or overnight.
