Crunchy Avocado and Black Bean Salad Recipe

  • 1 shallot, minced (I use onion) (small)
  • 3 tablespoons fresh lime juice
  • 2 teaspoons honey
  • 1 teaspoon grated lime zest
  • 1 teaspoon olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon freshly ground pepper
  • 1 can black beans, drained and rinsed (15 ounce can)
  • 1 red bell pepper, diced
  • 1/2 English cucumber, diced (I use regular cucumber)
  • 1 avocado, peeled, pitted, and diced
Whisk together shallot, lime juice, honey, lime zest, oil, salt, and pepper in a small bowl. Combine beans, bell pepper, and cucumber in a large bowl. Add dressing; mix well. Add avocado; gently toss to blend.
