Vegetable Beef Soup 10 Recipe

  • 3 pounds beef shanks, cracked
  • 8 cups water
  • 9 beef bouillon cubes
  • 2 bay leaves
  • 1 can whole tomatoes, undrained (28 ounce can)
  • 1 cup carrots, peeled and sliced
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1 teaspoon Thyme
  • 1 cup uncooked elbow macaroni
In a large kettle combine beef shanks, water, beef bouillon cubes & bay leaves, Bring to a boil reduce heat, simmer covered for 1 1/2 hours or until meat is tender. Remove shanks & bay leaves. Cool stock, skim fat from surface, cube meat. Add meat, tomatoes, vegetables & thyme. Simmer covered for 20 minutes. Add macaroni cook an additional 10 minutes or until macaroni is tender.
