Turkey, Rice and Vegetable Soup Recipe

  • 6 cups very hot tap water
  • 3 cups frozen mixed vegetables (corn, green peas, carrots, green beans)
  • 1 can tomatoes, drained (16 ounce can)
  • 12 ounces cooked boneless turkey
  • 1 box 5 minute chicken flavor long grain and wild rice mix (4.4 ounce box)
  • 1/4 cup packed parsley sprigs
Put water and mixed vegetables in a 5 quart pot over high heat; bring to a boil. Meanwhile, cut up the tomatoes and add to pot.

Cut turkey in 1/2 inch pieces (should be about 2-1/2 cups) Add to pot with rice and contents of seasoning packet from mix. Return to a boil; reduce heat; cover and simmer 7 to 10 minutes until rice is tender, chopping parsley and adding it while the mixture simmers.
