Apple Carrot Salad Recipe

  • 1 pound carrots, peeled and shredded
  • 2 tart apples, peeled and shredded (large)
  • 1/2 cup raisins
  • 2 tablespoons Lemon Juice
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla
  • 1 cup plain yogurt
In a medium bowl, combine shredded carrots, shredded apples and raisins. In a separate bowl, whisk together lemon juice, honey, vanilla and yogurt. Pour yogurt mixture over carrot mixture. Toss until evenly coated and chill in refrigerator until ready to serve. Makes 4 servings.
