Simple Vegetable Soup Recipe

Use your favorite vegetables for this vegetarian soup. Barley would also be great in this instead of the rice of macaroni.

Ingredients
  • 1 pound ground beef
  • 2 tablespoons vegetable oil
  • 1 quart boiling water
  • 1 quart canned tomatoes
  • 2 cups potatoes, peeled, cubed
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cups okra
  • 2 cups cabbage, shredded
  • 1/2 cup uncooked rice or macaroni
  • 1 tablespoon salt
  • 1/2 tablespoon pepper
Directions
Brown ground beef in oil over medium heat; drain.

Add water, tomatoes, potatoes, carrots, onion, okra, cabbage, rice or macaroni, salt and pepper.

Cover and bring to a boil.

Lower heat and simmer for about 1 hour.
