Chicken Vegetable Soup 2 Recipe

Ingredients
  • 1 tablespoon butter
  • 1 onion chopped
  • 4 Leeks chopped
  • 3 carrots chopped
  • 1 Parsnip chopped
  • 2 potatoes cubed
  • 1/2 teaspoon Salt
  • 1/4 teaspoon pepper
  • 4 cups chicken broth
  • 4 cups water
  • 2 Chicken breast, skinned, boned, cut into 1/2 inch cubes.
  • 2 tablespoons parsley
Directions
Melt butter in soup pan. Add onion, leeks, carrots, parsnip, potatoes. Cook stirring about 5 minutes. Add salt and pepper to taste. Add broth and water. Bring to boil then simmer for 30 minutes. Add chicken. Cook 10 minutes more. Add parsley.
