Mock Egg Salad (Tofu) (Vegetarian) Recipe

Ingredients
  • 8 ounces Firm Tofu (finely chopped or coarse-mashed)
  • 1 pound grated Carrot
  • 1/4 cup finely chopped parsley
  • 2 tablespoons chopped walnuts
  • Dressing
  • 3 tablespoons mayonnaise
  • 2 tablespoons tahini
  • 1 tablespoon olive oil
  • 1 teaspoon Tamari (Soy Sauce)
  • 1/2 teaspoon Janes Lemon Pepper
  • 1/4 teaspoon Janes Crazy Salt
  • 1/8 teaspoon ground turmeric
  • 1/2 teaspoon Sweetener (Sugar or Honey)
Directions
Note: All measurements are approximated or adjusted to taste.

Combine tofu, carrot, parsley, and walnuts. Set aside.

Mix mayonnaise, tahini, olive oil, and tamari (can be processed in a blender). Add seasonings (lemon pepper, salt turmeric, sweetener) to taste.

Mix tofu mixture with dressing.

If mixture is very dry, add a small amount of Cider, Apple Juice, or other Creamy Dressing.

Optional:

Add Mustard, Basil, or Yeast Flakes.

Other creations: Add Celery (finely cut) or Olives.
