Homemade Vegetable Beef Soup Recipe

Ingredients
1 pound lean ground chuck
3 cans progresso minestrone soup (19 ounce cans)
1 can rotel diced tomatoes & green chilies (10 ounce can)
1 can white/yellow corn (15 ounce can)
1 onion chopped (large)
1 can kidney beans (19 ounce can)
1 can crushed tomatoes (28 ounce can)
1 soup can of water
salt & pepper to taste
Directions
Brown ground chuck and onion in a bit of olive oil. Add the rest of the ingredients and bring to a boil. Be careful not to scorch the mixture as it is very thick. Turn heat to low and simmer for 30 minutes.
