Canned Irish potatoes make this soup a quick and easy comfort food since they are already partially cooked. And the cheese makes it extra special.

Ingredients
  • 4 cups Irish potatoes, diced
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup onions, chopped
  • 2 chicken bouillon cubes
  • 2 cups water
  • 2 cups milk
  • 8 ounces Velveeta cheese, diced
Directions
Cook vegetables, bouillon, water and salt & pepper. When vegetables are tender, add milk and cheese. Heat until cheese melts.
