Turkey Vegetable Soup Recipe

Ingredients
  • 1 pound lean ground turkey
  • 1 onion, finely chopped
  • 1 clove garlic, finely minced
  • 1 can V-8 Tomato Juice or other vegetable juice
  • 1 can diced tomatoes (28 ounce can)
  • 1 can or 1 box frozen french cut green beans
  • 1 can or 1 box frozen corn
  • 1 can or 1 box frozen peas
  • 3 carrots, cut into rounds (large)
  • 1 - 2 ribs celery, sliced
  • 1 - 2 tablespoon oregano
Directions
Brown meat and onion; drain any fat. Add remaining ingredients. Simmer until carrots are tender.

(Optional: Add thinly sliced mushrooms and/or navy beans.) Serve with corn bread
