Rhubarb Salad 2 Recipe

  • 4 cups rhubarb, fresh or frozen.
  • 1/2 cup water
  • 2 packages strawberry jello (small pkgs)
  • 2 cans mandarin oranges
  • 1 1/2 cups juice from the oranges - if necessary add water to make 1 1/2 cup.
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice
  • 1 cup chopped celery
Combine rhubarb, water, sugar and salt. Bring to a boil and simmer until tender.

Remove from heat, add Jell-O, stir until dissolved.

Add juices and water. Stir until partially thickened.

Add celery and oranges. Chill.

Serve with sour cream, if desired.
