In a large stockpot melt butter and saut onions until tender.
Add Chicken Broth, Potatoes, and Seasonings. If more liquid is needed add water. Cook until potatoes are done (Medium Heat; Stir often).
In a Blender mix Gravy Mix with 1/2 cup of Water until smooth. Continue blending and add 1 Cup of Milk until mixed well.
Bring Potatoes to a boil and pour in the Gravy/Milk mixture. Then turn down heat between low and medium.
Wait about 3 to 5 minutes and add Velveeta Cheese (Cube the cheese as it melts faster). Reduce heat to low and cook for about 5 minutes. (Be sure to stir potato soup very well or it may try to stick to the bottom of the pot.
