Mexican Vegetable Soup Recipe

  • 1 pound Ground Beef
  • 1 can Rotel tomatoes
  • 1 jar salsa, medium
  • 1 package frozen mixed vegetables
  • 1 package frozen corn
  • 1 onion chopped (large)
  • 2 potatoes, chopped (large)
  • 2 teaspoons garlic powder
  • 1 can black beans
  • salt and pepper to taste
  • water
  • 1 can broth, chicken or beef
Brown ground beef, drain and put in crockpot. Add all ingredients to crockpot. Season to taste. Add water to cooking line of crockpot. Set on "hot" until mixture comes to a boil. Turn to warm. Cook 2 - 4 hours. Serve with tortilla chips, sour cream and hot chilies.
