Beef And Vegetable Stew Recipe

  • 1 1/2 pounds stewing beef
  • 1 onion, chopped (medium)
  • 2 tablespoons oil
  • 1/2 teaspoon Salt
  • 2 1/4 cups potatoes, diced
  • 3 carrots, chopped (medium)
  • 1 teaspoon Salt
  • 1 pint green beans
  • Sauce ingredients
  • 2 tablespoons ketchup
  • 1 tablespoon prepared mustard
  • 1 tablespoon vinegar
  • 1 teaspoon Salt
  • 1/4 cup flour
  • 2 beef bouillon cubes, dissolved inch 1-1/4 cup boiling water
At 10:30 or so, brown beef and onion in oil. Place in crock pot; cover with water. Sprinkle with 1/2 tsp. salt. Turn on high at 11:00. Meanwhile, in kettle, partially cook potatoes and carrots with 1 tsp. salt and a little water. Drain. Reserve liquid. At 2:30 add potatoes and carrots to crock pot along with reserved liquid plus enough to cover food in crock. Turn to low when it begins to bubble. Mix sauce ingredients. At 4:00 turn crock on high and stir in green beans and sauce. Cook on high till bubbly, then on low till ready to serve at supper. (More thickening may be added if a thicker stew is preferred.
