LENTIL VEGETABLE SOUP Recipe

Ingredients
  • 2 cups lentils, pre-soaked and drained
  • 5 cups water
  • 2 slices bacon, diced
  • 1 onion, chopped (large)
  • 1 cup carrots, peeled and diced
  • 3 stalks celery with tops, sliced thin
  • 2 cloves garlic, minced
  • 2 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried oregano, crushed
  • 1 pound canned tomatoes
Directions
Place all ingredients into a large dutch oven and cook over medium heat for 1 hour, stirring occasionally. Reduce heat to low and allow to simmer 1 to 1 1/2 hours.
