Carrot Salad 3 Recipe

Ingredients
  • 6 carrots, sliced
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, pressed
  • 4 tablespoons parsley, chopped
  • 1/4 teaspoon salt
Directions
Boil carrots in a small amount of salted water until tender, about 20 minutes.

Drain and cool for a few minutes.

Combine with remaining ingredients, tossing gently to coat. Chill before serving.
