Spinach Madeline Recipe

Ingredients
  • 1 package frozen chopped spinach
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 tablespoon minced onion
  • 1/4 cup evaporated milk
  • 1/4 cup reserved spinach liquid
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery salt
  • 1/2 teaspoon garlic powder
  • 4 ounces cubed pepper jack cheese (or jalepeno cheese)
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup Italian bread crumbs
Directions
Cook spinach according to package directions. Drain and reserve the liquid from draining spinach.

Melt butter in saucepan over low heat. Add flour and stir until smooth. Do not brown. Add onions and cook until soft.

Add spinach liquid, stir constantly to avoid getting lumps. Cook till smooth and starts to thicken. Keep stirring. Add all seasonings and cheese. Stir until melted, smooth and thick.

Combine in cooked spinach and 1/4 C. of bread crumbs. Mix till combined and thick.

7. Put into casserole dish. Put 1/4 cup bread crumbs on top. Place in preheated 350° oven and cook for 20 minutes.
