Ingredients
1 1/2 cups light brown sugar
1/2 cup fresh orange juice
1 teaspoon ground cinnamon
1/4 cup bourbon
1 tablespoon vanilla
4 sweet potatoes, peeled and cut inch eighths (large)
1/2 cup water
1 teaspoon orange zest
1/4 teaspoon salt
1/2 stick butter, cut inch pieces
Directions
Preheat oven to 375°. In large heavy pot, combine potatoes, sugar, water, orange juice, vanilla, orange zest, cinnamon and salt. Bring to simmer over high heat. Lower heat, cover and simmer, stirring occasionally, until potatoes are tender, about 20 minutes. Strain potatoes out of sauce and place potatoes in casserole dish. Return sauce to pan. Add bourbon to the sauce and continue to cook until sauce is thickened, about 15 minutes. Pour sauce over potatoes and place in oven. Bake until potatoes are browned, about 10-15 minutes. Remove from heat and add butter, stirring gently to incorporate. Serve immediately. Very good!
