MARINATED VEGETABLE SALAD Recipe

Ingredients
  • 2 cans cut green beans, drained
  • 2 cans Peas, drained
  • 1 green pepper, diced
  • 2 stalks celery, diced
  • 1 onion, diced fine (medium)
  • 1 jar pimento, cut up, optional (2 ounce jar)
  • Dressing
  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1/4 cup water
  • Salt and pepper to taste
Directions
In refrigerator dish with a cover, combine all the vegetables that have been well drained. For the dressing, combine all dressing ingredients and heat in microwave to dissolve sugar. Pour warm over vegetables. Refrigerate until ready to eat. You can make a dressing without the oil or use your favorite Italian dressing. This is a good keeper salad that you can pull out of the refrigerator to add to your meals.
