Homemade Ice Cream BonBons Recipe

  • 30 vanilla wafer cookies
  • 2 1/2 cups Ice Cream - your favorite
  • 1 package 12 ounce Semi-Sweet Chocolate Chips
  • 6 tablespoons margarine
Arrange cookies on a wire rack placed on aluminium foil lined pan; freeze 20 minutes. Scoop Ice Cream with 1-1/2 inch ice cream scoop directly onto cookies; freeze at least 1 hour on rack. Microwave chocolate on High for 1 minute or until almost melted. Let stand 1 minute; stir until smooth. Stir in margarine until melted. Moving quickly, spoon about 1 Tablespoon of warm chocolate mixture over each bonbon, covering ice cream and cookie. Freeze 1 hour or until ready to serve.
