CHOCOLATE ECLAIR (Sugar Free) Recipe

Ingredients
  • 24 low fat graham crackers (1 box)
  • 2 boxes sugar free vanilla pudding (small boxes)
  • 3 cups skim milk
  • 1 container fat free Cool-Whip (12 ounce container)
  • 1 box sugar free chocolate pudding (small box)
  • 1 1/2 cups skim milk
Directions
Place 8 crackers in bottom of 9x13 inch glass baking dish. Mix both vanilla puddings and milk, let set 2 minutes. Gently fold in Cool Whip and pour half of this mixture over crackers. Top this with 8 more crackers and add remaining vanilla mixture. Add 8 more crackers. Mix chocolate pudding with milk, let set 2 minutes. Then spread this mixture over last layer of crackers. Refrigerate 6 hours or overnight to soften graham crackers. Garnish with strawberries.
