Chocolate Fudge Meringue Cookies Recipe

  • 4 egg whites
  • 3 1/2 cups confectioners sugar
  • 2 teaspoons vanilla sugar
  • 6 tablespoons cocoa
  • 4 cups shelled walnuts or pecans (large pieces)
Preheat oven to 350°. Line baking sheets with parchment paper and set aside. Use food processor with the S-blade to process all ingredients at once, until mixture is well combined (about 15-20 seconds). Drop by teaspoonfuls onto prepared baking sheets, using two teaspoons (one to scoop, the other to scrape). HINT: Spray teaspoons with cooking spray. Bake one sheet at a time, for 10 minutes. Let cool before handling. Stores and freezes well.
