VEGETABLE BRIYANI Recipe

Ingredients
  • 2 cups Basmati rice, cooked
  • 1 cup mixed vegetables
  • 1 green pepper, sliced thin into rings
  • 3 tablespoons salt
  • 1/8 teaspoon powdered saffron
  • 2 tablespoons warm milk
  • 1 onion, sliced into rings (medium)
  • 1/2 cup plain yogurt
  • Masala paste
  • 1/4 teaspoon anise seeds
  • 1/2 teaspoon chopped ginger
  • 4 cloves chopped garlic
  • 1 stick cinnamon (1 inch stick)
  • 2 red or green chillies
  • 1 teaspoon cumin seed
  • 1 tablespoon grated coconut
Directions
Start with the Masala paste and grind all ingredients together with a little water. Heat a little oil and fry masala paste for 3-4 minutes. Add mixed vegetables and yogurt slowly while stirring. Add salt to taste. Stir on medium heat until it boils. Add a little water if needed until vegetables are tender.

Fry onions and peppers and leave aside.

Dissolve the saffron in milk. Add this to cooked rice and mix. In a casserole dish, sprinkle a few fried onions, spread 1/2 the rice over the onions and spread the vegetable over the rice. Place half of the green pepper rings and put the remaining rice, then cover with remaining onions and pepper rings. Cover and bake at 400 degrees for 15-20 minutes. Serve hot.
