Blueberry Muffins 80 Recipe

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup oil
  • 1 egg
  • 1/2 cup rolled oats (any type)
  • 1/2 cup orange juice
  • 1 cup blueberries, fresh or frozen
  • 2 tablespoons sugar
  • 1/4 teaspoon cinnamon
Combine flour, sugar, baking powder, salt and baking soda. Mix well and add oil and egg. Stir in oatmeal and orange juice. Fold in blueberries.

Spoon batter into 12 paper-lined muffin cups.

For topping, mix sugar and cinnamon. Sprinkle over tops of muffins. Bake at 400° for 18 - 20 minutes.
