Pickled Green Tomatoes 3 Recipe

  • 15 firm medium green tomatoes, quartered
  • 2 sweet onions, thick sliced
  • 1 green bell pepper, cut into chunks
  • 10 cloves garlic
  • 2 hot peppers, quartered
  • 4 cups apple cider vinegar
  • 2 cups water
  • 2 cups sugar
  • 2 tablespoons salt
In 10 sterilized pint jars, place an even amount of quartered green tomatoes. Add a few sliced onions and green pepper chunks to each jar. Add 1 clove garlic and some hot peppers to each jar. In a medium saucepan over medium high heat, combine vinegar, water, sugar and salt. Bring mixture to a boil and pour boiling liquid over ingredients in each jar. Seal jars and place in a hot water bath, using enough water to cover the jars. Bring the water to a boil for 15 minutes. Makes 10 pints.
