Ingredients
2/3 cup butter, melted
1/3 cup milk
1 egg, beaten
1 1/2 cups flour
1 1/2 cups oats
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon cream of tartar
1/2 teaspoon Salt
1/2 cup golden raisins, optional
1 tablespoon lemon zest
Directions
Add butter to egg and milk. Combine flour, oats, sugar, baking powder, cream of tartar, and salt. Add to egg/milk mixture and stir just until moistened. Stir in raisins and zest. Shape dough into a ball. Pat on lightly floured surface to form 8" circle Cut into 12 wedges. Bake on greased cookie sheet at 425° for 12 to 15 minutes. Serve warm with butter, preserves, jelly or honey. These are nice served at a brunch.
