Tipsy Tomatoes (Vegetarian) Recipe

  • 3 pts. small Cherry Tomatoes
  • 1/2 cup vodka
  • 3 tablespoons White Wine Vinegar
  • 1 tablespoon Powdered Sugar
  • 1 teaspoon grated fresh Lemon Zest
  • Salt to taste
  • Ground Black Pepper to taste
*Using different colors of tomatoes makes the salad prettier.

Skin the tomatoes (either by blanching them or using a peeler).

Stir together vodka, vinegar, sugar, and lemon zest until sugar is dissolved, then pour over tomatoes. Toss to coat.

Let tomatoes marinate in refrigerator up to 1 hour.

Add salt and pepper to taste.

These are nice if you serve them alongside small cubed pieces of cheese, or marinated mini-balls.
