Salsa 111 Recipe

  • 3 quarts tomatoes, chopped
  • 12 jalapeno peppers, chopped
  • 3 bell peppers, seeded, chopped
  • 1 onion, chopped
  • 2 tablespoons salt
  • 1 cup sugar (or less)
  • 1/2 cup vinegar
Place tomatoes in large kettle, stir. Add peppers, salt, sugar, vinegar and onion; stir to mix well. Bring mixture to a boil and simmer for 30 minutes to an hour. Seal or freeze. Makes 7 pints. You may adjust the hotness or sweetness by adjusting the amount of sugar or peppers. Water bath for 10 minutes.
