Canned Pork n' Beans Recipe

  • 8 pounds Long Northern Navy Beans
  • 5 pounds Ham or Bacon, cut up fine
  • 1/8 cup salt
  • 4 quarts Tomato Juice
  • 1 Onion, cut up fine (Large)
  • 3 cups water
  • 4 cups brown sugar
  • 3 cups white sugar
  • 1 bottle Ketchup (26 ounce Bottle)
  • 1/2 teaspoon red pepper
  • 1 teaspoon Dry Mustard
  • 1 teaspoon cinnamon
Soak beans overnight, then cook until tender. Pour off water. Add ingredients (fry onions and meat before adding. Add grease and all). Cold pack 3 hours. Makes 15 quarts.
