Spiced apple Rings Recipe

  • 12 apples
  • 1 cup Sugar
  • 8 cups water
  • 4 teaspoons Red Food Coloring (optional)
  • 1 teaspoon allspice
  • 1 teaspoon mace
  • 1 teaspoon Whole cloves (30)
Wash apples and remove core and peel. Cut into slices 3/8" thick. Tie spices into a spice bag or cheese cloth, Bring all ingredients (except apple slices) together in a medium saucepan to a boil over high heat. Add apple slices and boil until tender but Firm. Remove from heat and weight apples under solution and let stand overnight. Pack in jars and pour liquid leaving 1/4" head space. Wipe rims and threads with a clean damp cloth. Tighten rings and lids. Place in a hot water bath for (5) minutes. Remove from hot water using a jar lifter and place on a towel and let stand overnight to cool. Check seals and store in a cool dry place. Shelf life is one year and refrigerator life is six months.
