Sugar Free Gingerbread Stack Cake Recipe

Ingredients
  • 2 1/2 cups Self-Rising Flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon soda
  • 2 1/2 tablespoons ginger
  • 2 Eggs
  • 10 packages NutraSweet
  • 1/2 cup corn oil
  • Filling
  • 4 cups apples, stewed
  • 10 packages NutraSweet
  • Cinnamon to taste
Directions
Mix ingredients together for cake. Add enough hot water to make a batter. Pour into two round greased cake pans. Bake at 350° until center springs back when touched.

FILLING: Stew the apples; add NutraSweet and cinnamon. On bottom of cake plate, spread a thin layer of apples. Place one layer of cake over apples and spread more apples on top of cake layer. Repeat with second layer.
